Have You Visited MacFarlane Pheasants’ Recipe Page?

Barbecue Pheasant and Gouda Pizza is one of my absolute favorites. It is listed on page five as an appetizer, but I have loaded it up with extra pheasant and eaten it as a meal! Seriously, you have to try this simply delicious recipe.

Another of my all-time favorite recipes is on page 20. The recipe is made from a whole MacFarlane pheasant and is called Drunken Pheasant. I will share this recipe in my article so you can see how easy it is to prepare.

1 MacFarlane whole pheasant, 2-3 pounds
1 tablespoon dark mustard, 4 tablespoons olive oil
1 tablespoon rosemary leaves
1⁄4 cup Scotch or Whiskey
(wine will work if you are out of the others)
1⁄4 cup pheasant broth (chicken will work too) 

Directions: Remove the breast portions from the fresh or thawed bird. Then cut off the leg quarters, removing the skin. Pour the olive oil into a medium sauté pan and heat on medium-high heat. Coat the pheasant pieces with the mustard and place in a preheated pan to brown. Turn over as browning occurs. Add the remaining ingredients to the pan, cover, and bring the liquid to a boil. Reduce the heat to simmer for 7-8 minutes, and then uncover and remove breast portions to a covered plate to keep warm. Keep the leg quarters in the broth and simmer for another 5 minutes until the broth is reduced to a nice sauce consistency. Serve with garlic mashed potatoes and Brussels sprouts or asparagus.
