Summer Grilling with Pheasant

There are still plenty of summer days left for backyard grilling. We have a great summer grilling package that will be a real treat for your family and guests. The package contains 4-6 split breast meat with the drummers attached, a package of ground breast meat, and 4 of our classic brats.

Pheasant is an excellent substitute for chicken. It has a lower fat content, saturated fat, and cholesterol than chicken. But those reasons are why it is a little trickier to cook on the grill! You can't just put it on the grill and walk away. Grab a drink and a lawn chair and prepare to grill one of your summer's tastiest meals. Enjoy some grilling tips for the grilling package!

Pheasant Breast with Rosemary, Thyme, and Sage

Prepare virgin olive oil and melted butter mixture. Add fresh rosemary, sage, thyme, and salt and pepper to taste. Brush pheasant breasts with this mixture and place them on a hot grill for approximately 8 minutes, on each side. Take your pheasant off the grill when the internal temperature reaches 160 degrees. Cover and let rest for 5 minutes before serving. Keep your eye on the prize!

Classic Pheasant Brats

Prepare pheasant brats the same way you would prepare any brat. I like to boil them gently for about 15 minutes in half beer, half water (just covered), and some chopped onions. I follow up with 5-10 minutes on the grill to brown them to perfection. If I need to keep them warm, I put them back in the beer, water, and onions, on warm, until my guests are ready to eat. Buns and condiments are your choices. I like mine plain.

Pheasant Burgers

Put your ground pheasant in a mixing bowl. Then put four pieces of bacon in a frying pan and get them hot on both sides. Do not cook them! Remove the bacon from the pan, chop it up into small pieces, and then throw it in with the ground pheasant. Next, chop a quarter cup of onion and throw it in with the bacon and ground pheasant.

Crumble eight saltines on top of the bacon, onion, and ground pheasant, lightly salt and pepper, and then, mix it like you're making meatloaf. Make your burgers and cook them on the grill until brown and delicious. Have buns, lettuce, tomato, and condiments ready.
