Jalapeno Duck AppetizerPrep time: 45 minutes Cook time: 20 minutesIngredients:2-3 wild duck breasts1 can sliced water chestnuts4 jalepeno peppers1 oz Grand Marnier or Conac2 oz soy sauce1 tsp Powdered Ginger1 lb sliced baconToothpicks
Cube duck breast into 3/4 inch cubes.Combine duck, ginger, soy sauce, grand marnier into Ziplock bag and marinade for 3 hoursCut Jalepeno peppers into 3/4 inch x 1/2 inch pieces. Make sure you get all the seeds and fuzzy lining out of the peppers or they will be VERY hot.Cut slab of bacon in half.After duck has marinated, lay one slice of water chestnut flat on the end of one half slice of bacon. Place one cube of duck on top and then one slice of pepper. Roll them in the bacon and insert a toothpick to keep them together. Preheat oven to 400 degrees, place rolls in a row and cook 10-14 minutes, then broil for 3-5 minutes.
