Jalapeno Duck Appetizer

Prep time: 45 minutes             Cook time: 20 minutes


Ingredients:
2-3 wild duck breasts
1 can sliced water chestnuts
4 jalepeno peppers
1 oz Grand Marnier or Conac
2 oz soy sauce
1 tsp Powdered Ginger
1 lb sliced bacon
Toothpicks

Cube duck breast into 3/4 inch cubes.
Combine duck, ginger, soy sauce, grand marnier into Ziplock bag and marinade for 3 hours
Cut Jalepeno peppers into 3/4 inch x 1/2 inch pieces. Make sure you get all the seeds and fuzzy lining out of the peppers or they will be VERY hot.
Cut slab of bacon in half.
After duck has marinated, lay one slice of water chestnut flat on the end of one half slice of bacon. Place one cube of duck on top and then one slice of pepper. Roll them in the bacon and insert a toothpick to keep them together.
Preheat oven to 400 degrees, place rolls in a row and cook 10-14 minutes, then broil for 3-5 minutes.
